The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into distant history, in fact as far back into recorded history as pharonic Egypt, and potentially, even further back. Interesting though that maybe, in the main part, these ancient cook books were just basic pictorial recipes for food preparation.
Fascinatingly, the oldest recipe in existence, according to experts in ancient history are some clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. During the time of the Roman Empire a man called Apicius compiled some scripts describing recipes enjoyed by his fellow Romans. In his works, he recounts how the meals of wealthy Romans were split into starters, entrees and afters, something that is very familiar to us today. Additionally, he informs us how the ancient Romans made use of a wide range of aromatic flavors, including a few you will know such as bay, rue and asafoetida. Over the following few hundred years, the rich families of Europe competed with each other to serve the best banquets, and as a consequence, the best cooks and their recipe collections increased in prestige. Nevertheless, it was during the 1800s the formal cooking and recipe publications became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and writing down recipes for their fellow cooks to enjoy. By the arrival of the 20th century, recipe books were in high demand, due to more people being able to read, more leisure time and a general increase in wealth. Like it or not, the introduction of television brought us cooking programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through massive numbers of recipes just like those on sites such as this. |
