The History of Recipes
It is quite feasible to prove the history of recipes back into ancient history, certainly as far back as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, sadly, these ancient recipes were just basic hieroglyphic recipes for food preparation.
During Roman times 25BC a man called Apicius created a number of scripts describing recipes enjoyed by his fellow Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, entrees and afters, something we still use today. He also describes how the Romans were skilled in the use of a good variety of spices, including a few that will be familiar to modern chefs like bay, rue and dill. During the succeeding few centuries, the rich families of the West competed with each other to serve the most extravagent banquests, and as a result chefs and their recipes could command a high salary. However, it wasn`t until the 1800s that cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collecting, testing, and publishing recipes to allow everyone to enjoy them. By the time we get to the twentieth century, cooking publications were in high demand, as a result of increased literacy, increased leisure time and having more money to spend. |
