The History of Recipes
It is quite feasible to trace the history of recipes back into antiquity, in fact as far as ancient Egypt, and possibly even further than that. Having said that, in the main part, these ancient recipes were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to academics are a few tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. As we move into Roman times around 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he tells us how the roman meals were separated into hors d`oeuvres, main course and dessert, a very modern way of dining. Additionally, he informs us how the Romans were skilled in the use of a wide range of herbs and spices, including some familiar names such as bay, rue and parsley. During the following few centuries, the wealthy families of the West strove to lay on the most exotic meals, and as a consequence, cooks and their recipe collections were at a premium. Nevertheless, it wasn`t until the nineteenth century that fine cookery and cookery books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, verifying, and writing down recipes for their fellow cooks to enjoy. By the advent of the 1900s, cooking books were starting to become popular mostly as a result of more people being able to read, people having more free time and having more disposable income. The revolution that is television brought us celebrity TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of the internet, permitting everybody to access massive numbers of recipes just like those on our web site. |
