6 ts pineapple preserves
1/4 c firmly packed brown sugar
1/4 c vegetable oil
1 lg egg white
1/2 c milk
1 c all-purpose flour
1 1/2 ts double-acting baking powder
1/2 ts cinnamon
1/4 ts salt
3/4 c sweetened flaked coconut --
: toasted lightly
Drop 1 heaping teaspoon of the preserves into each of 6 well-buttered
1/3 to 1/2 cup muffin tins. In a bowl whisk together the brown sugar,
the oil, and the egg white until the mixture is smooth and whisk in
the milk. In another bowl whisk together the flour, the baking
powder, the cinnamon, the salt , and the coconut, add the milk
mixture, and stir the batter until it is just combined. Divide the
batter among the tins and bake the muffins in the middle of a
preheated 400oF oven for 20 minutes, or until a tester comes out
clean. Let the muffins cool for 3 minutes, run a knife around each
muffin, and lift each muffin out with a fork, inverting it onto a

The History of Recipes
We can trace the history of written recipes back into the far past, certainly as far into history as the early Egyptians, and possibly even further than that. Interesting though that maybe, generally, these old cookbooks were just simple pictorial instructions for food preparation.
Later on, in Roman times around 25BC a man called Apicius created a number of documents describing recipes cooked by his fellow Romans. In his scrolls, he describes how the roman meals were split into starters, entrees and afters, something that is very familiar to us today. This early Roman chef informs us how the chefs of Roman times used a wide range of aromatic flavors, including many that are still in use today such as thyme, fennel and asafoetida. For the next few years, the rich families of Wesstern Europe competed with each other to lay on the most exotic banquets, and because of this cooks and their recipes could command a high salary. Even so, it was during the 1800s that cooking and recipe publications really came of age. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. By the advent of the twentieth century, cooking publications were in high demand, due to higher levels of literacy, people having more free time and having more money to spend. |
