The History of Recipes
Recipes as an idea can be observed back into history, in fact as far back as ancient Egypt, and possibly even further than that. However, in the main part, these old cookbooks were just very simple hieroglyphic instructions for food preparation.
In fact, the most ancient recipe discovered, according to historians is a collection of ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Later on, there were some books dating from the fourteenth century ; one book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, these two books are nothing to do with the curry that is popular today, but rather descriptions of the types of meals cooked for the rich and powerful. Later on in the 1400s, people returning from the crusades brought us a variety of spices and herbs from the holy lands, including spices like basil and coriander. These new spices and herbs led to a surge in manuscripts on cooking, many of which still exist in private collections. For the centuries that followed, the upper classes strove to serve up the most exotic banquets, and consequentially the best chefs and their recipe collections were greatly in demand. Even so, it was during the 1800s that cooking and recipe collections became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and writing down the recipes of their peers. By the advent of the twentieth century, cookery books are greatly in demand mostly due to better eduction, people having increased leisure time and having more money. The introduction of the TV gave us TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting us all to search through thousands of recipes just like those on this recipe site. |
