The History of Recipes
It is possible to trace the history of meal recipes back into distant history, at least as far back into history as ancient Egypt, and potentially, even further back. In practice though, mostly, these ancient recipes were just basic pictorial recipes for preparing food.
The truth of the matter is, the oldest recipe discovered, according to academics are a few ancient tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Later, there are some recipe books which date from the fourteenth century ; a cookery book published under the title `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these books have no connection with the curry that is familiar to us all today, but instead recipes for the types of meals prepared by the cooks of the rich and powerful of the period. In the fifteenth century, knights returning from the crusades brought back many new foods and spices from Arab cooking, including spices like rosemary and coriander. The introduction of these new foods and spices created an explosion in manuscripts on food, most of which are now in private collections. Over the following few hundred years, the upper-class families of the West strove to lay on the most extravagent banquests, and as a consequence, the best chefs and their recipe collections became highly prized. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, trying out, and publishing the recipes of their peers. By the arrival of the 20th century, cookery publications are starting to become popular as a result of more people being able to read, people having increased leisure time and disposable income. The introduction of television brings us celebrity TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes just like those on our site. |
