Ingredients
4 cup corn kernels, fresh/frozen
3 tbsp poppy seeds
1 tsp coriander seeds
1 tsp sesame seeds
1 tbsp ginger, grated
2 each chili peppers
3/4 cup coconut, shredded
1/2 cup peanuts
3 tbsp ghee
1 tsp salt
5 cup coconut milk
Directions
Cook the corn by boiling in a small amount of water until tender. Set
aside. Using a mortar & pestle, grind all the spices, the coconut &
peanuts into a smooth paste. In a large, heavy skillet, heat the
ghee & fry the paste for 4 to 5 minutes, stirring constantly. Add the
corn, salt & coconut milk & simmer until the sauce reduces by half &
becomes thick, 15 minutes or so. Serve over rice.

The History of Recipes
Experts have tracked the existance of recipes way back into ancient history, certainly as far back as pharonic Egypt, and possibly even further than that. Having said that, generally, these old cook books were just very simple hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe discovered, according to experts in ancient history are some clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Progressing into Roman times 25BC a roman called Apicius compiled a few documents describing recipes prepared by wealthy roman citizens. In his works, he tells us how the roman meals were split into appetizers, main course and desserts, a style of dining still practiced today. He also informs us how the Roman chefs made use of a wide range of aromatic flavours, including some that we all recognise like bay, fennel and parsley. Later on, in the 15th century, people returning from the crusades brought us many foods and spices from the holy land, including spices like coriander, parsley, and rosemary. The introduction of these new culinary ideas created an increase in books on cooking, many of which are kept safe in private collections. The TV revolution brings us TV cookery programs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes just like those on our site. |
