Ingredients
PIE
1/2 cup sugar
5 tbsp all-purpose flour
1/8 tsp salt
1/4 cup cold milk
1 1/2 cup scalded milk
3 each egg yolks
1 tsp vanilla extract
1 cup shredded coconut
1 each 9 prepared pie shell,baked
MERINGUE
3 each egg whites
6 tbsp granulated sugar
Directions
Pie: Blend sugar,flour and salt with the cold milk.Add scalded milk,
gradually,stirring constantly.Cook on a low heat until thick.Add
beaten egg yolks.Cook 2 minutes longer.Remove from heat.Add vanilla
extract and coconut.Cool then pour into previously baked pie
shell.Cover with meringue (recipe follows).Makes one 9" pie.
Meringue: Use 3 egg whites to cover a 9" pie shell.Use 2 level
tablespoons granulated sugar for each egg.Beat egg whites until
stiff.(They should be glossy on top and when you invert the bowl,
they should remain in place.)Fold in the sugar,gradually.Cover the
pie with meringue.

The History of Recipes
Written recipes as a concept can be observed back into history, certainly as far as pharonic Egypt, and maybe even further. However, these, early recipes were just very basic pictorial recipes for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to experts is a collection of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. Continuing our culinary historical journey, there are a couple of cookery books which were published in the 1300s ; a recipe book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the indian food that is familiar to us all today, but instead accounts of the types of food on the menues of the rich and powerful of that period. Later on, in the 15th century, the Crusaders brought back a variety of foods and herbs from middle-east cuisine, including spices such as basil and coriander. The introduction of these new foods and spices created a torrent in recipe publications, most of which are kept safe in private libraries. Over the succeeding few hundred years, the wealthy families of the West competed to lay on the most extravagent meals, and because of this chefs and their recipe collections became highly prized. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collating, testing, and writing down the recipes that were being prepared for the better households. When we get to the twentieth century, cooking books were highly popular mostly as a result of higher levels of literacy, increased leisure time and disposable income. The TV revolution brought us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on this site. |
