The History of Recipes
Experts have proved the existance of recipes far back into antiquity, certainly as far back as early Egypt, and possibly even further. In practice though, generally, these early records were just very simple hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe found, according to historians is a series of stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. During the time of the Roman Empire a roman called Apicius wrote some documents describing recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the ancient Romans made use of many different herbs and spices, including a few that will be familiar to modern chefs such as bay, fennel and asafoetida. Over the following few hundred years, the powerful and wealthy houses competed with each other to serve the most extravagent meals, and as a result chefs and their recipe collections were much in demand. Notwithstanding that, it wasn`t until the 19th century the formal cooking and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to assembling, verifying, and publishing popular recipes of the day. Like it or not, the introduction of television gave us cooking programs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through massive numbers of recipes like those on our site. |
