The History of Recipes
Written cooking instructions as an idea can be traced far back into ancient history, in fact as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. Having said that, generally, these early cook books were just simple hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the most ancient recipe found, according to Professor Solomon Katz, are a few stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Moving our culinary historical trip onwards, there were a couple of books published in the 1300s ; a recipe book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, these books are unconnected to the curry that is popular today, but rather descriptions of the types of food served to the rich and powerful of the period. In the 15th century, people returning from the crusades brought us a variety of foods and spices from the Middle-East, including spices such as basil and coriander. The introduction of these new foods and spices created an eruption in manuscripts on cooking, many of which still exist in academic collections. Over the following few centuries, the rich and powerful families of the West strove to serve the most extravagent banquests, and as a result chefs and their recipe collections were highly sought after. Nevertheless, it wasn`t until the 19th century that cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and writing down recipes to allow everyone to enjoy them. The arrival of TV gave us TV chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to search through massive numbers of recipes like those on this web site. |
