The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into antiquity, certainly as far back into recorded history as the ancient Egyptians, and maybe further still. In practice though, in the main part, these ancient recipes were just primitive hieroglyphic recipes for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to experts are a few stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Continuing our culinary historical journey, we find a couple of cookery books dating from the 14th Century - a recipe book published under the title `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, they are unconnected to the curry that is served today, but rather recipes for the types of meals cooked for the nobility of the time. Over the succeeding few centuries, the powerful and rich houses competed to lay on the most exotic banquets, and because of this the best cooks and their recipes became highly prized. Notwithstanding that, it was during the 19th century that formal cookery and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and writing down popular recipes of the day. When we get to the 20th century, cook books are highly popular mostly due to higher levels of literacy, people having more leisure time and disposable income. |
