Mix 2 cups shredded coconut, either fresh or packaged, with 2 cups of
light cream. Heat to just below simmering point, then remove from
heat and let steep for 30 minutes. Strain through cheesecloth or a
wire strainer, pressing or squeezing out all the liquid.
Makes 2 cups of coconut milk--or cream.

The History of Recipes
It is quite possible to track the history of written cooking instructions way back into antiquity, at least as far into history as the Egyptians, and possibly even further. In practice though, these, old records were just simple pictorial recipes for meal preparation.
Progressing into The time of the romans around 25BC a roman called Apicius compiled a number of documents detailing recipes cooked by the Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the early Romans used many different spices and herbs, including some that we all recognise such as thyme, fennel and parsley. Later, in the 15th century, people returning from the crusades brought us many foods, spices and herbs from Arab cuisine, such as basil and rosemary. The introduction of these new culinary ideas prompted an increase in manuscripts on cooking, the majority of which still exist in academic collections. By the time we get to the twentieth century, cookery books were in great demand, due to higher levels of literacy, more spare time and being a little richer. |
