The History of Recipes
Experts have proved the existence of recipes way back into the far past, at least as far back into recorded history as pharonic Egypt, and possibly even further. In practice though, sadly, these old cookbooks were just basic pictorial recipes for meal preparation.
Fascinatingly, the oldest recipe in existence, according to historians is a collection of clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. As we move into The time of the roman empire 25BC a roman called Apicius assembled a collection of documents describing recipes prepared by his fellow Romans. In his publication, he tells us how the meals were divided into starters, main meal and afters, something we still use today. Additionally, he recounts how the cooks of Roman times were skilled in the use of many herbs, including some familiar names like bay, mint and asafoetida. As our culinary historical trip moves on a few more years we have a couple of interesting books which were published in the 1300s ; one book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, they have no connection with the curry that is familiar to us all today, but rather descriptions of the types of meals on the menus of the upper classes. In the fifteenth century, knights returning from the crusades brought back many foods and spices from Arab cooking, such as basil and coriander. The introduction of these new tastes was responsible for an explosion in manuscripts on food, many of which still exist in academic collections. By the arrival of the 20th century, cooking books are in great demand, as a result of more people being able to read, more free time and having more money. |
