Coconut-Molasses Muffins Recipe


Ingredients

2 cup am whole wheat flour
2 tsp non-alum baking powder
1/2 tsp sea salt (optional)
1/2 tsp ginger
1 cup flaked unsweetened coconut
1/4 cup am unrefined vegetable oil
1 egg or egg replacer
2/3 cup buttermilk
1/2 cup unsulphured molasses or- honey
1 tsp pure vanilla


Directions

In mixing bowl stir together flour, baking powder, salt, ginger and
coconut. Mix liquid ingredients and add to the dry mixture until
moistened. Fill well-greased muffin tins 2/3 full. Bake at 350 F. for
20-25 minutes.

(Yield: 24 small or 12 large muffins)

Over the succeeding few centuries, the rich and powerful families of Wesstern Europe tried to lay on the most exotic banquets, and as a consequence, chefs and their collection of recipes were greatly in demand. Notwithstanding that, it was during the 1800s that haute cuisine and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, spent years to collecting, testing, and recording recipes common in their social group.

The TV revolution brings us celebrity chefs and the accompanying recipe books.
