Ingredients
1 cup evaporated milk or heavy
1 cream
1 cup sugar
3 egg yolks, slightly beaten
1/2 cup butter or margarine
1 tsp vanilla
1 1/3 cup shredded coconut
1 cup chopped pecans
Directions
Combine milk, sugar, egg yolks, butter and vanilla in a saucepan.
Cook over medium heat, stirring constantly until mixture thickens,
about 12 minutes. Remove from heat. Add coconut and pecans. Cool
until of spreading consistency, beating occasionally.
Makes 2 1/2 cups or enough to cover the tops of 3 9-inch layers. For
thinner frosting, use only 2 egg yolks.

The History of Recipes
Historians have traced the existance of recipes way back into distant history, in truth as far back as early Egypt, and possibly even further. However, in the main part, these ancient recipes were just simple pictorial instructions for meal preparation.
During Roman times around 25BC a roman called Apicius assembled a number of documents which described recipes cooked by the Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the cooks of his times used a good variety of aromatic flavours, including a few that are still present in modern kitchens for example basil, fennel and asafoetida. Over the following few hundred years, the upper-class families of the West tried to offer the most extravagent meals, and because of this chefs and their recipes were highly sought after. Nevertheless, it wasn`t until the 19th century that formal cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to collecting, trying out, and recording the recipes of their peers. Like it or not, the introduction of television brings us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes such as those found on sites such as the one you are reading now. |
