The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into distant history, certainly as far as ancient Egypt, and maybe even further. However, sadly, these early records were just very basic hieroglyphic instructions for meal preparation.
Progressing into The time of the roman empire 25BC a roman called Apicius created a number of documents describing recipes prepared by the Romans. In his scrolls, Apicius describes how the roman meals were split into appetizers, main meal and desserts, something that is very familiar to us today. Aspicius informs us how the Roman chefs made use of a good variety of spices and herbs, including a few that are still present in modern kitchens such as basil, fennel and asafoetida. For the centuries that followed, the families of Europe competed with each other to offer the most exotic banquets, and consequentially the best cooks and their recipes could command a high salary. Even so, it was during the 19th century that fine cooking and recipe publications became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, testing, and recording recipes for their fellow cooks to enjoy. The introduction of the TV gave us TV cookery programs and the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing us all to search through massive numbers of recipes such as those found on this site. |
