The History of Recipes
It is quite possible to prove the history of written cooking instructions way back into distant history, in fact as far back into recorded history as the early Egyptians, and maybe even further. In practice though, mostly, these early recipes were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the most ancient recipe discovered so far, according to food historians are a few tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Later on, in The time of the roman empire around 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes prepared by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into starters, entrees and dessert, something that is very familiar to us today. Additionally, he recounts how the Roman chefs used a good variety of spices and herbs, including some that we all recognise like bay, rue and dill. During the following few hundred years, the rich and powerful families of Wesstern Europe strove to lay on the most extravagent banquests, and because of this cooks and their collection of recipes could command a high salary. Notwithstanding that, it was during the 1800s that haute cuisine and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to collecting, testing, and writing down recipes to help cooks of their time. By the time we get to the 1900s, cookery books were starting to become popular as a result of higher levels of literacy, more free time and having more money to spend. |
