The History of Recipes
Transcribed cooking instructions as a concept can be observed way back into the distant past, at least as far back into history as pharonic Egypt, and possibly even further than that. In practice though, in the main part, these early records were just very simple pictorial instructions for preparing meals.
In an interesting twist, the oldest recipe discovered so far, according to experts are a few tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. Much later, in Roman times a man called Apicius assembled a number of documents describing recipes prepared by wealthy roman citizens. In his publication, he tells us how the meals were divided into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the chefs of Roman times made use of many different herbs, including a few that are still present in modern kitchens for example basil, rue and asafoetida. Continuing our culinary historical journey, there are some recipe books which were published in the 14th Century : a recipe book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are a little misleading though, these two books are nothing to do with the indian food that is served today, but instead accounts of the types of food prepared by the cooks of the rich. Later on, in the 15th century, the Crusaders brought back many foods and herbs from middle-east cuisine, such as basil and rosemary. The introduction of these new tastes created a surge in recipe manuscripts, some of which are now in private cookery archives. When we get to the twentieth century, recipe books are in great demand, mostly as a result of higher levels of literacy, people having more free time and disposable income. |
