The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into the distant past, in fact as far back into recorded history as the ancient Egyptians, and possibly even further than that. Having said that, these, ancient cookbooks were just very simple hieroglyphic or cunieform instructions for meal preparation.
As we move into The time of the romans 25BC a man called Apicius assembled a number of documents showing how to cook the recipes enjoyed by wealthy Romans. In his publication, Apicius tells us how the roman meals were split into appetizers, entrees and dessert, something we still use today. Aspicius informs us how the Roman cooks were skilled in the use of many different spices, including some that we all recognise like thyme, mint and dill. Later, in the 15th century, the Crusaders brought back a variety of spices and herbs from the East, such as coriander, parsley, and rosemary. These new culinary innovations led to a surge in manuscripts on food, most of which still exist in academic collections. By the time we get to the twentieth century, recipe publications were greatly in demand mostly due to increased literacy, people having more free time and disposable income. |
