The History of Recipes
Written recipes as a concept can be traced back into ancient history, in fact as far back into history as the early Egyptians, and potentially, even further back. However, generally, these early cookbooks were just very simple hieroglyphic instructions for meal preparation.
In an interesting twist, the most ancient recipe discovered so far, according to experts is a series of tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Much later, in Roman times a man called Apicius created some documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, main course and afters, a very modern way of dining. Additionally, he informs us how the ancient cooks were skilled in the use of many spices, including a few that will be familiar to modern chefs like bay, mint and asafoetida. Over the succeeding few hundred years, the rich families of the West strove to serve up the best banquets, and because of this the best chefs and their recipes became highly prized. Notwithstanding that, it was during the 19th century that fine cookery and cookery books really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, verifying, and publishing recipes of the day. By the arrival of the 20th century, recipe books were highly popular mostly as a result of increased literacy, people having more free time and disposable income. |
