Ingredients
1 oz butter
1/2 cup onion, finely chopped
3/4 tsp chile powder
2 drop hot sauce
1 cup barbecue sauce
2 tbsp honey
1 salt and pepper to taste
2 each cl garlic, minced
1 tsp cumin
1/2 cup coffee liqueur
2 tbsp worcestershire sauce
1 tsp salt
20 each chicken wings
Directions
In a 2 Qt. saucepan melt butter; saute garlic and onion over
medium heat for 3 minutes. Add cumin and chili powder and cook,
stirring constantly for 2 minutes. Blend in Coffee Liqueur and cook
to reduce liquid by one-half. Stir in hot sauce, Worcestershire,
barbeque sauce and salt. Simmer 5 minutes. Remove from heat and add
honey. Set aside and allow to cool.
Prepare chicken wings by removing and discarding the tips. Divide
the wings in half at the remaining joint. Marinate the wings in the
cooked sauce for 1 hour at room temperature, or overnight in the
refrigerator. To cook,, place the marinated wings on a broiler pan,
sprinkle with salt and pepper and broil 5 minutes, turn and brush
with the remaining sauce and bake at 350 degrees for 15 minutes.
Serve hot. Wings can be prepared a day ahead and can be reheated in
the oven.

The History of Recipes
Experts have tracked the existence of recipes way back into ancient history, certainly as far back into recorded history as early Egypt, and potentially, even further back. Interesting though that maybe, mostly, these early records were just basic pictorial instructions for meal preparation.
As we move into The time of the roman empire 25BC a man called Apicius created a collection of scripts detailing recipes prepared by his fellow Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the Roman cooks used a good variety of herbs and spices, including a few that will be familiar to modern chefs like bay, rue and parsley. Over the next few centuries, the rich families of Europe competed to serve the most extravagent meals, and consequentially the best chefs and their collection of recipes were at a premium. Even so, it wasn`t until the 19th century that formal cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collecting, verifying, and publishing recipes to allow everyone to enjoy them. The introduction of television brought us TV cooks and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes just like those on sites such as this. |
