The History of Recipes

We are able to track the history of meal recipes back into the distant past, at least as far back into history as the Egypt of the Pharoahs, and potentially, even further back. However, mostly, these ancient recipes were just simple pictorial recipes for preparing food.

The truth of the matter is, the oldest recipe found, according to Professor Solomon Katz, is a collection of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated.

Later on, in The time of the roman empire around 25BC a man called Apicius assembled a number of scripts describing recipes prepared by wealthy roman citizens. In his scrolls, Apicius describes how the roman meals were split into hors d`oeuvre, entrees and afters, something that is very familiar to us today. Aspicius informs us how the ancient Romans made use of a good variety of spices, including a few that are still present in modern kitchens such as bay, mint and dill.

As we move on, there are some recipe books published in the fourteenth century - one book entitled `Forme of Cury`, and another called `Curye on Inglish`. Amusingly, these have no connection with the spicy food that appears on menues today, but instead accounts of the types of food on the tables of the rich and wealthy people of that period.

Later, in the fifteenth century, the Crusaders brought back many foods and spices from the Middle-East, including spices like coriander, parsley, and rosemary. These new herbs and spices caused an outbreak in cookery books, some of which are kept safe in private cookery archives.

During the following few hundred years, the powerful families of Wesstern Europe competed with each other to offer the most extravagent banquests, and as a result the best chefs and their recipes were greatly in demand. Even so, it wasn`t until the 1800s the formal cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and recording the recipes that were being prepared for the better households.

By the time we get to the 1900s, recipe publications were in great demand, as a result of increased literacy, people having increased spare time and being a little richer.

The arrival of television brought us TV cookery programs and the demand for the spin-off recipe books.

And that brings us to the present day and the invention of the internet, permitting everyone to search through thousands of recipes such as those found on this web site.
