The History of Recipes
Historians have proved the existance of recipes way back into ancient history, certainly as far into history as the early Egyptians, and possibly even further. Interesting though that is, in the main part, these early records were just primitive hieroglyphic instructions for food preparation.
Interestingly, the oldest recipe in existence, according to food historians is a series of tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. During Roman times around 25BC a man called Apicius created a collection of scripts describing recipes cooked by wealthy roman citizens. In his works, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. Aspicius also recounts how the ancient chefs made use of a good variety of herbs and spices, including a few that are still present in modern kitchens such as bay, rue and parsley. In the fifteenth century, knights returning from the crusades brought us many spices and herbs from Arab cooking, such as coriander, parsley, and rosemary. These new foods and tastes caused an eruption in recipe manuscripts, some of which are now in private libraries. During the succeeding few hundred years, the rich families of Europe competed with each other to lay on the most exotic banquets, and as a consequence, cooks and their recipes were at a premium. However, it wasn`t until the 19th century that fine cookery and recipe publications became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, verifying, and recording recipes for their fellow cooks to enjoy. Like it or not, the introduction of television brought us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting us all to search through thousands of recipes such as those found on our web site. |
