The History of Recipes
Food historians have proved the existence of recipes far back into ancient history, in truth as far back as early Egypt, and potentially, even further back. Interesting though that is, in the main part, these ancient records were just simple pictorial recipes for food preparation.
Fascinatingly, the most ancient recipe discovered, according to experts is a collection of tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. Progressing into The time of the romans 25BC a roman called Apicius created a collection of scripts which described recipes cooked by the Romans. In his scrolls, he recounts how the meals were divided into starters, entrees and afters, a style of dining still practiced today. He also tells us how the ancient Romans made use of a good variety of spices and herbs, including a few that are still present in modern kitchens such as basil, rue and dill. In the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, including spices like parsley, basil and rosemary. These new foods and tastes was responsible for an outbreak in manuscripts on cooking, many of which are now in private cookery archives. Over the next few centuries, the upper classes tried to offer the most exotic meals, and consequentially the best chefs and their collection of recipes were highly sought after. However, it was during the 1800s that formal cookery and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collecting, testing, and recording recipes for their fellow cooks to enjoy. By the arrival of the twentieth century, cookery books are starting to become popular mostly as a result of better eduction, people having increased leisure time and disposable income. The introduction of television gave us celebrity TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on this recipe site. |
