The History of Recipes
We are able to read the history of meal recipes way back into history, at least as far back into history as pharonic Egypt, and potentially, even further back. Interesting though that is, these, old cook books were just primitive hieroglyphic instructions for preparing meals.
The truth of the matter is, the oldest recipe in existence, according to academics is a collection of clay tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. As we move into The time of the romans around 25BC a roman called Apicius compiled a collection of scripts describing recipes prepared by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and afters, something that is very familiar to us today. Aspicius also recounts how the Roman cooks were skilled in the use of many spices, including some that we all recognise for example thyme, mint and dill. Moving our culinary historical trip onwards, there are two books which were published in the 14th Century ; a cookery book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Amusingly, these are unconnected to the indian food that is popular today, but rather descriptions of the types of food on the menus of the upper classes of that time. In the 15th century, the Crusaders brought back many new foods and herbs from the Middle-East, such as parsley and basil. These new spices and herbs prompted a torrent in recipe publications, many of which are now in academic collections. When we get to the 1900s, cooking books were starting to become popular mostly as a result of increased literacy, more free time and having more money to spend. The arrival of TV brought us celebrity TV chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes like those on this site. |
