The History of Recipes
Recipes as an idea can be traced back into the distant past, in truth as far into history as early Egypt, and quite possibly further than that. Interesting though that maybe, sadly, these ancient cook books were just basic pictorial instructions for meal preparation.
During the time of the Romans a man called Apicius assembled a number of scripts which described recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main meal and desserts, a very modern way of dining. Aspicius also recounts how the cooks of Roman times made use of many different herbs, including some familiar names for example thyme, rue and dill. Later on, in the 15th century, the Crusaders brought back many new foods and herbs from the East, including coriander, basil and rosemary. These new spices and herbs caused an explosion in recipe books, most of which are kept safe in private libraries. When we get to the 20th century, recipe publications were starting to become popular mostly as a result of increased literacy, people having increased free time and having more disposable income. |
