Ingredients
1 1/4 lb eggplant, peeled & cut into 1/2 cub, es
1/2 cup chopped onion
1/2 stick butter
1 tbsp curry powder
4 cup chicken stock
3/4 cup heavy cream
Directions
Salt & white pepper
Saute onion in butter, stir in curry powder, & cook 2 minutes. Add
eggplant & stock, bring to a boil, then simmer, covered, for 45
minutes, or until eggplant is very soft. Puree in blender. Strain
puree if desired (I didn't) & add cream, salt, & white pepper to
taste. Chill at least 3 hours & serve very cold. Serves 4-6. This is

The History of Recipes
It is quite feasible to prove the history of written cooking instructions way back into antiquity, certainly as far into history as the Egyptians, and quite possibly further than that. Having said that, in the main part, these old recipes were just very simple hieroglyphic or cunieform recipes for preparing meals.
Progressing into Roman times around 25BC a roman called Apicius compiled a few scripts detailing recipes prepared by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into starters, main meal and afters, a very modern way of dining. Aspicius also recounts how the ancient chefs made use of a good variety of herbs and spices, including some familiar names for example bay, rue and dill. Later on in the 1400s, people returning from the crusades brought us a variety of foods and spices from the holy lands, including spices such as coriander, basil and rosemary. The introduction of these new foods and spices was responsible for an eruption in manuscripts on cookery, the majority of which are kept safe in private collections. By the advent of the twentieth century, cookery books were highly popular as a result of better eduction, increased leisure time and a general increase in wealth. |
