Ingredients
6 each potatoes, large *
1 ; boiling water
1/2 tsp salt
1 each onion, medium, minced
3 tbsp vinegar
1/2 tsp mustard, prepared
1 tsp sugar
2 tsp dillseed
Directions
* Potatoes should be peeled and quartered.

++++++++++++++ ++++ In medium saucepan cook potatoes in boiling
salted water until tender. Drain, reserving 3/4 cup of potato water.
Dice potatoes. Add oil and minced onion; toss gently. In small
saucepan bring the 3/4 cup potato water to a boil; pour over potatoes
and onion. Keep at room temperature for 2 to 3 hours. Stir in
vinegar, mustard, sugar, and dillseed. Potato salad will be creamy.
Serve at room temperature.

The History of Recipes
Historians have proved the existance of recipes far back into the distant past, certainly as far back into history as the Egyptians, and maybe even further. In practice though, in the main part, these old records were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe discovered, according to food historians are some ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful. During Roman times around 25BC a roman called Apicius created a few documents detailing recipes enjoyed by the Romans. In his publication, Apicius tells us how the roman meals were separated into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. Aspicius informs us how the ancient Romans were skilled in the use of many different herbs, including many that are still in use today for example thyme, fennel and dill. In the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from the holy lands, including spices such as basil and coriander. The introduction of these new tastes prompted a surge in books on cookery, many of which still exist in private collections. Like it or not, the introduction of television gave us TV cooks and the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes like those on this web site. |
