Ingredients
3 oz olive oil
7 oz onion, chopped
10 1/2 oz cabbage,chopped
10 1/2 oz tomatoes, chopped
1 pt water
3 1/4 oz lemon juice
4 tbsp honey
3 1/4 oz orange juice
1 oz tofu balls
Directions
Heat oil & saute onions till translucent. Add cabbage & saute 5
minutes more. Add tomatoes, water, lemon juice, honey & simmer for
15 to 20 minutes. Season with salt & pepper & remove from heat. Pour
soup into food processor & puree to a smooth consistency. Refrigerate
for 6 to 8 hours. Before serving, blend soup with orange juice. Place
tofu balls in a dish & pour soup over the top. Garnish with
julienned cabbage & chervil leaves.

The History of Recipes
It is quite possible to prove the history of written cooking instructions back into history, certainly as far back as the early Egyptians, and maybe even further. In practice though, mostly, these early recipes were just very simple hieroglyphic instructions for meal preparation.
Progressing into Roman times around 25BC a man called Apicius compiled a few documents describing recipes cooked by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, main course and afters, a style of dining still practiced today. He also tells us how the Roman cooks used a good variety of spices, including a few you will know for example basil, mint and parsley. Later on in the 1400s, the Crusaders brought back many spices and herbs from middle-east cuisine, including spices such as basil and coriander. The introduction of these new tastes caused an increase in manuscripts on cooking, many of which are now in private cookery archives. The introduction of the TV brought us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes such as those found on this recipe site. |
