Ingredients
1 each onion, finely sliced
1 each garlic clove, crushed,up to 2
2 tsp curry powder
3 each cloves, crushed
1/2 each red chili, finely chopped
1 lb pumpkin, * peeled & cut in 1 inch
2 each tomatoes, chopped
1 tbsp sultanas, golden raisins
1/4 tsp sugar, optional
1 each lemon, juice of
2 tbsp oil
1 salt & pepper
Directions
* the pumpkin in the recipe is not the pumpkin that we use for Jack O'
Lanterns, it is the orange squash that is called "pumpkin" in West
Indian groceries
First, heat the oil in a heavy pan and then add the onion. Saute
until it is transparent and then add the garlic and cook that also.
Next put in the curry powder, ground cloves, the chopped tomatoes,
sultanas and sugar. Sprinkle the lemon juice over. Cover, and cook
very gently for 30-40 minutes or until pumpkin is tender, stirring
frequently to ensure that it does not catch. Season and serve to
accompany main dishes and rice.

The History of Recipes
It is quite possible to prove the history of recipes way back into distant history, in fact as far into history as the early Egyptians, and maybe even further. Having said that, in the main part, these ancient recipes were just simple hieroglyphic instructions for meal preparation.
The truth of the matter is, the oldest recipe found, according to experts is a collection of clay tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. As we move into Roman times around 25BC a roman called Apicius compiled a few documents describing recipes prepared by wealthy Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, main course and afters, something we still use today. Additionally, he tells us how the Roman chefs were skilled in the use of many spices, including many that are still in use today such as bay, rue and parsley. Later, in the 15th century, knights returning from the crusades brought back many foods and spices from the East, including rosemary and coriander. These new culinary innovations was responsible for an increase in manuscripts on food, most of which are now in private collections. The revolution that is television brings us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access massive numbers of recipes like the ones you can find on this web site. |
