Ingredients
4 oz low-fat sharp cheddar cheese
4 oz non-fat ricotta cheese
1/2 cup walnuts
1/2 cup california dried figs
1/4 cup parsley sprigs
1/4 cup chunked red bell pepper or- canned, pimento
1 garlic clove
2 tbsp low or non-fat milk
Directions
If using a food processor, cut low-fat cheddar cheese into cubes.
Process until finely chopped. Add ricotta cheese, process about 10
seconds. Add remaining ingredients, except milk, and process until
all ingredients are finely chopped. Add milk as needed to reach
desired consistency. Serve with crackers or crisp vegetable sticks.

The History of Recipes
Experts have traced the existence of recipes way back into antiquity, in truth as far back as the Egyptians, and maybe further still. Interesting though that maybe, in the main part, these early records were just very basic hieroglyphic or cunieform recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to food historians is a collection of ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius created some documents detailing recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into starters, entrees and afters, something we still use today. Aspicius also informs us how the chefs of Roman times used many different herbs and spices, including a few that will be familiar to modern chefs such as bay, mint and parsley. Over the following few centuries, the powerful and rich competed to serve up the most exotic meals, and as a result chefs and their collection of recipes were at a premium. Nevertheless, it was during the 1800s that formal cookery and recipe collections became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and publishing popular recipes of the day. By the arrival of the twentieth century, cookbooks are highly popular mostly as a result of increased literacy, increased leisure time and having more money to spend. The introduction of television gave us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing everybody to access thousands of recipes like those on our site. |
