The History of Recipes
Written recipes as a concept can be observed back into ancient history, in fact as far back as early Egypt, and potentially, even further back. Having said that, these, ancient recipes were just basic pictorial recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to food historians are some stone tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Much later, in Roman times a man called Apicius created some scripts showing how to cook the recipes cooked by the Romans. In his scrolls, he tells us how the roman meals were divided into hors d`oeuvres, main course and desserts, a style of dining still practiced today. He also describes how the cooks of Roman times used a wide range of herbs and spices, including a few that will be familiar to modern chefs like bay, rue and parsley. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and herbs from the East, including spices like coriander, parsley, and rosemary. These new culinary innovations created a torrent in recipe books, many of which still exist in private collections. Over the succeeding few hundred years, the upper-class families of Europe strove to offer the most exotic meals, and as a result the best chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted their lives to assembling, verifying, and publishing recipes to help cooks of their time. When we get to the twentieth century, cooking publications were greatly in demand mostly as a result of increased literacy, people having increased leisure time and having more money to spend. |
