The History of Recipes
It is possible to read the history of written recipes way back into the distant past, in truth as far back as ancient Egypt, and possibly even further. Interesting though that is, mostly, these early cookbooks were just very basic hieroglyphic instructions for meal preparation.
Later on, in The time of the roman empire 25BC a man called Apicius assembled a number of documents which described recipes cooked by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and desserts, something we still use today. He also informs us how the ancient chefs used many different spices, including a few that will be familiar to modern chefs such as thyme, rue and parsley. For the decades that followed, the powerful families of Wesstern Europe tried to offer the most exotic meals, and because of this cooks and their recipes increased in prestige. However, it wasn`t until the 1800s that cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collating, testing, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 1900s, recipe books are starting to become popular mostly due to higher levels of literacy, more spare time and a general increase in wealth. |
