The History of Recipes
Recipes as a concept can be tracked back into antiquity, certainly as far into history as the Egyptians, and possibly even further. Interesting though that maybe, in the main part, these old recipes were just very simple hieroglyphic instructions for preparing meals.
Fascinatingly, the oldest recipe discovered, according to food historians are some tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. As our culinary historical trip moves to more modern times there were two recipe books published in the 14th Century ; a book titled `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these two books have no connection with the spicy food that is popular today, but rather accounts of the types of meals cooked for the upper classes of the time. Over the next few centuries, the rich and powerful families of the West competed to serve up the most extravagent banquests, and consequentially the best cooks and their recipe collections could command a high salary. Nevertheless, it was during the 19th century the formal cooking and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collating, verifying, and recording recipes to allow everyone to enjoy them. By the arrival of the twentieth century, cookery books were in great demand, as a result of better eduction, people having more spare time and having more money to spend. |
