The History of Recipes

Food historians have proved the existence of recipes way back into the far past, certainly as far into history as early Egypt, and possibly even further than that. Interesting though that maybe, sadly, these ancient cookbooks were just primitive hieroglyphic instructions for preparing meals.

Fascinatingly, the oldest recipe found, according to experts are a few tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful.

Progressing into The time of the romans 25BC a roman called Apicius assembled a collection of documents describing recipes cooked by his fellow Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, entrees and dessert, a very modern way of dining. He also informs us how the Romans used many different aromatic flavors, including a few that will be familiar to modern chefs such as thyme, fennel and asafoetida.

Over the next few centuries, the upper-class families of Europe competed with each other to lay on the most exotic meals, and as a result cooks and their recipe collections became highly prized. Even so, it wasn`t until the 1800s that haute cuisine and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, trying out, and publishing recipes for their fellow cooks to enjoy.

By the arrival of the twentieth century, cooking books are in high demand, mostly as a result of increased literacy, people having more free time and disposable income.

The introduction of television brings us cooking programs and the recipe books that accompanied them.

And that neatly brings us to the present day and the invention of the internet, permitting everybody to access thousands of recipes like those on sites such as this.
