The History of Recipes
It is quite possible to track the history of written cooking instructions back into antiquity, certainly as far back as the ancient Egyptians, and potentially, even further back. Interesting though that maybe, generally, these old recipes were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe discovered, according to academics is a collection of stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. Progressing into The time of the romans around 25BC a man called Apicius assembled some documents describing recipes cooked by wealthy roman citizens. In his publication, he describes how the meals were separated into starters, main meal and afters, a very modern way of dining. This early Roman chef tells us how the ancient chefs used a wide range of herbs, including a few that are still present in modern kitchens such as thyme, fennel and asafoetida. During the following few hundred years, the powerful families of the West competed with each other to serve the most extravagent banquests, and as a result the best chefs and their collection of recipes were much in demand. Even so, it wasn`t until the 1800s that haute cuisine and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to assembling, verifying, and recording popular recipes of the day. By the advent of the 20th century, recipe books are in high demand, as a result of increased literacy, people having increased free time and having more money. |
