Ingredients
1 pam coombes
1 cup fine dry bread crumbs
1/3 to 1/2 cup grated romano or
1 parmesan cheese
2 tbsp finely chopped parsley
3/4 tsp salt
1/8 tsp pepper
2 eggs -- beaten
2 tbsp milk
1 1/2 lb flank steak -- tenderized
1 and cut into pieces
10 ml garlic -- finely chopped or
1/4 tsp garlic salt
1/4 cup olive oil
1/2 cup ca sherry or marsala
Directions
Combine bread crumbs, cheese, parsley, salt and pepper; mix well.
Combine beaten eggs with milk. Dip meat in egg mixture, then in bread
crumb mixture; repeat until all eggs and crumbs are used. Cook garlic
in oil. Brown meat slowly in seasoned oil. When well browned, lower
heat and add wine. Cover and simmer 10 minutes. Adventures in Wine

The History of Recipes
Written cooking instructions as an idea can be traced way back into distant history, at least as far into history as the Egypt of the Pharoahs, and potentially, even further back. However, mostly, these old records were just simple pictorial, hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the oldest recipe found, according to historians is a series of stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel wonderful. As we move into The time of the roman empire around 25BC a roman called Apicius assembled a number of documents detailing recipes cooked by the Romans. In his publication, Apicius describes how the roman meals were divided into appetizers, main course and dessert, a style of dining still practiced today. This early Roman chef describes how the Roman chefs used a good variety of spices, including a few you will know like bay, fennel and dill. Over the next few hundred years, the upper-class families of the West competed to offer the most extravagent banquests, and as a result the best chefs and their recipes were greatly in demand. Nevertheless, it was during the nineteenth century that fine cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collecting, testing, and writing down recipes to help cooks of their time. The arrival of TV brings us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to access thousands of recipes such as those found on this web site. |
