The History of Recipes
We can follow the history of written recipes back into history, at least as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, generally, these ancient cookbooks were just very simple pictorial recipes for preparing meals.
In fact, the oldest recipe discovered, according to Professor Solomon Katz, is a collection of ancient tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. Later on, in The time of the romans around 25BC a man called Apicius compiled a few scripts describing recipes prepared by his fellow Romans. In his works, he recounts how the roman meals were split into hors d`oeuvre, entrees and desserts, something we still use today. This early Roman chef describes how the chefs of Roman times were skilled in the use of a good variety of spices and herbs, including a few that are still present in modern kitchens such as thyme, mint and parsley. Later on in the 1400s, knights returning from the crusades brought us many foods and spices from the holy lands, such as basil and rosemary. The introduction of these new culinary ideas prompted a surge in books on cookery, most of which are now in private collections. By the time we get to the 20th century, recipe publications are in great demand, as a result of better eduction, people having more free time and being a little richer. The arrival of television brought us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on this site. |
