The History of Recipes
It is quite feasible to follow the history of recipes way back into history, in fact as far into history as the ancient Egyptians, and quite possibly further than that. However, generally, these old recipes were just basic hieroglyphic recipes for meal preparation.
Progressing into The time of the romans around 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the roman meals were split into starters, main meal and desserts, something we still use today. He also describes how the ancient cooks used a good variety of herbs and spices, including a few that are still present in modern kitchens for example basil, rue and asafoetida. During the next few hundred years, the upper-class families of the West strove to serve up the most exotic meals, and consequentially the best cooks and their collection of recipes were at a premium. Nevertheless, it was during the 19th century that fine cooking and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collecting, verifying, and recording recipes of the day. By the time we get to the twentieth century, cookery publications are greatly in demand mostly due to better eduction, more leisure time and having more money to spend. |
