Ingredients
2 egg whites
1 pinch of salt
1/4 tsp cream of tartar
2/3 cup sugar
1 tsp vanilla
1 cup pecans, chopped
3/4 cup chocolate bits

Preheat oven to 350 degrees
Beat first 3 ingredients until stiff. Gradually add sugar, beating.
When shiny peaks form, add vanilla. Fold in pecans and chocolate bits.
Drop bite-sized mounds onto cookie sheets.
Place trays in oven; turn off heat and leave until morning. DO NOT
PEEK! These bake on retained heat.
Makes 60 or so cookies. Store in tightly covered container.

The History of Recipes
Food historians have found proof that recipes existed far back into antiquity, in truth as far back as early Egypt, and possibly even further than that. In practice though, in the main part, these ancient cook books were just primitive pictorial instructions for preparing food.
Interestingly, the most ancient recipe discovered, according to experts is a series of tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. As our culinary historical trip moves on a few more years we find two books which appeared in the 14th Century - a recipe book called `Forme of Cury`, and another entitled `Curye on Inglish`. The titles are a little misleading though, these are not about the indian curry that is popular today, but rather accounts of the types of food eaten by the rich people of the period. During the succeeding few hundred years, the powerful and wealthy houses tried to offer the most extravagent meals, and consequentially cooks and their recipes became highly prized. Notwithstanding that, it wasn`t until the nineteenth century that cookery and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collecting, testing, and publishing the recipes that were being prepared for the better households. By the arrival of the 1900s, cook books are starting to become popular mostly as a result of better eduction, people having more free time and disposable income. |
