The History of Recipes
Written cooking instructions as a concept can be found back into the far past, in fact as far back into history as ancient Egypt, and potentially, even further back. Having said that, generally, these old records were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Progressing into The time of the roman empire around 25BC a man called Apicius created a few documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his works, he tells us how the roman meals were separated into hors d`oeuvre, entrees and desserts, something we still use today. Aspicius also describes how the cooks of Roman times used many different spices, including some that we all recognise such as bay, mint and dill. Over the following few centuries, the rich families of Wesstern Europe strove to serve the most exotic meals, and as a consequence, the best chefs and their recipe collections were highly sought after. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collating, testing, and writing down popular recipes of the day. When we get to the 1900s, cooking publications are greatly in demand mostly due to more people being able to read, people having increased leisure time and being a little richer. |
