The History of Recipes
We can follow the history of written recipes way back into history, at least as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that is, these, early records were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
Later on, in The time of the romans around 25BC a roman called Apicius compiled a collection of scripts describing recipes prepared by wealthy Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvres, main meal and dessert, a style of dining still practiced today. He also describes how the Romans were skilled in the use of many aromatic flavours, including a few you will know for example bay, fennel and asafoetida. Later on in the 1400s, knights returning from the crusades brought back many foods and spices from the holy land, including coriander, parsley, and rosemary. The introduction of these new culinary ideas created an explosion in recipe publications, many of which are now in private collections. By the time we get to the 20th century, cookery publications are in great demand, as a result of better eduction, people having increased free time and having more money. |
