The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into ancient history, in truth as far as the ancient Egyptians, and maybe even further. Having said that, mostly, these early records were just simple hieroglyphic instructions for food preparation.
As we move into The time of the romans 25BC a roman called Apicius created a collection of documents which described recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were split into hors d`oeuvre, main course and desserts, something that is very familiar to us today. Aspicius also informs us how the chefs of Roman times were skilled in the use of many aromatic flavours, including a few that are still present in modern kitchens for example basil, fennel and dill. Later, in the 15th century, people returning from the crusades brought us many new spices and herbs from the Middle-East, including spices such as parsley, basil and rosemary. The introduction of these new foods and spices prompted a torrent in books on cooking, some of which are now in private libraries. By the time we get to the twentieth century, cookery books are increasing in popularity mostly due to increased literacy, leisure time and disposable income. |
