Ingredients
6 single chicken breasts cooked
6 slices ham, cooked
6 slices swiss cheese
4 tbsp butter
4 tbsp flour
1/4 tsp thyme
1 egg, beaten
1 3/4 cup milk
1/4 cup dry breadcrumbs
2 tsp butter, melted
Directions
In a greased 8x8 inch baking pan, arrange a layer of chicken, top
with a layer of ham, then a layer of cheese. To prepare sauce, melt 4
tablespoons butter, and add flour and thyme. Combine egg and milk,
and add slowly to flour mixture. Continue cooking, stirring
constantly, until smooth and thickened. Pour over chicken. Combine 2
teaspoons melted butter and dry breadcrumbs. Spread over sauce.
Bake at 350øF for 30 minutes, or until heated through. Makes 6

The History of Recipes
We are able to trace the history of meal recipes way back into history, in truth as far back into history as the ancient Egyptians, and quite possibly further than that. Interesting though that is, generally, these early recipes were just simple hieroglyphic or cunieform recipes for preparing meals.
As we move into Roman times 25BC a roman called Apicius compiled a collection of scripts which described recipes enjoyed by his fellow Romans. In his publication, he tells us how the roman meals were separated into appetizers, entrees and afters, something that is very familiar to us today. Additionally, he describes how the ancient Romans used many aromatic flavours, including some that we all recognise like thyme, fennel and parsley. Later, in the fifteenth century, knights returning from the crusades brought back many new spices and herbs from Arab cooking, including parsley, basil and rosemary. The introduction of these new culinary ideas created an outbreak in manuscripts on food, some of which still exist in private collections. The revolution that is television brings us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to search through thousands of recipes like the ones you can find on sites such as the one you are reading now. |
