Ingredients
2 package 8 1/2-oz corn muffin mix
1 cup nonfat milk
1 cup low-fat cottage cheese
2 large eggs
1/2 cup shredded cheddar cheese, (packed) (about 2 oz)
Directions
Preheat oven to 400F. Line 12 standard-size muffin cups with paper
liners. Combine muffin mix, milk, cottage cheese and eggs in large
bowl. Using electric mixer, beat until well combined. Mix in cheddar
cheese. Let stand 5 minutes. Spoon batter into prepared cups,
dividing equally. Bake until muffins are brown on top and tester
inserted into center comes out clean, about 30 minutes. Let muffins
cool to room temperature.

The History of Recipes
Experts have traced the existance of recipes far back into antiquity, in fact as far back as the Egypt of the Pharoahs, and possibly even further than that. In practice though, sadly, these old cook books were just very simple hieroglyphic recipes for food preparation.
Interestingly, the most ancient recipe found, according to academics is a collection of tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. Closer to modern times, we find some interesting books published in the 14th Century : a cookery book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books are nothing to do with the spicy food that we all know today, but instead descriptions of the types of meals cooked for the rich and powerful of that time. During the succeeding few centuries, the powerful and rich houses strove to offer the most extravagent banquests, and as a result cooks and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, verifying, and publishing recipes for their fellow cooks to enjoy. By the arrival of the 1900s, cook books are greatly in demand as a result of increased literacy, more free time and having more disposable income. |
