Ingredients
1 1/4 cup corn, whole-kernel, fresh or frozen
1 cup bell pepper, red, finely chopped
1 cup scallions, finely chopped
1 tsp jalape#o, finely minced (opt)
1 tsp ground cumin
1 1/4 cup flour
2 tsp baking powder
1 salt, to taste
1 pepper, black, to taste
1 cup milk
4 tbsp oil (approx.)
Directions
Put the corn in a mixing bowl along with the chopped pepper,
scallions, and hot pepper.
Sprinkle with the cumin, flour, baking powder, salt, and pepper; stir
to blend. Add the milk and stir to blend thoroughly.
Heat enough oil to barely cover the bottom of a nonstick skillet.
Spoon the batter in 1/4 cup batches into the skillet and cook until
golden brown on one side, about 2 minutes.
Turn the fritters and cook about 2 minutes on the other side. Add
more oil to the skillet as necessary for each batch.

The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into distant history, in truth as far into history as the early Egyptians, and potentially, even further back. Having said that, generally, these ancient recipes were just simple hieroglyphic recipes for food preparation.

During the time of the Romans a roman called Apicius created some scripts which described recipes cooked by wealthy roman citizens. In his scrolls, he recounts how the meals were split into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. Aspicius also tells us how the cooks of Roman times made use of a good variety of herbs, including some familiar names such as thyme, fennel and asafoetida. Over the next few hundred years, the powerful and rich tried to offer the most exotic banquets, and because of this the best chefs and their recipe collections could command a high salary. Nevertheless, it wasn`t until the 1800s that cookery and recipe collections rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and writing down the recipes that were being prepared for the better households. The arrival of TV gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes such as those found on the site you are now reading. |
