The History of Recipes
Experts have tracked the existence of recipes far back into the distant past, in fact as far back as the Egyptians, and possibly even further. Interesting though that is, mostly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to Professor Solomon Katz, are a few ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. As our culinary historical trip moves to more modern times there were some interesting books from the 1300s - a recipe book published under the title `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, they are not about the spicy food that is familiar to us all today, but instead recipes for the types of meals prepared by the chefs of the rich and wealthy people of that time. Over the next few centuries, the upper classes strove to offer the best banquets, and as a result chefs and their recipes were highly sought after. However, it was during the nineteenth century that cooking and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and publishing recipes common in their social group. By the arrival of the twentieth century, cookery books are greatly in demand due to increased literacy, increased leisure time and being a little richer. |
