Corn & Pepper With White Wine Recipe


Ingredients

1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1/4 cup sweet butter
6 ears corn, shucked
1/4 cup dry white wine


Directions

In a skillet, cook the onion and the bell peppers in the butter over
moderately low heat, stirring, for 3 minutes, or until the vegetables
are softened. While the pepper mixture is cooking, cut the corn
kernels off the cobs with a sharp knife. Add the corn to the skillet
and cook the mixture, stirring, for 2 minutes. Add the wine and salt
and pepper to taste and simmer the mixture, covered, for 5 minutes.

Over the next few centuries, the upper classes strove to offer the best banquets, and as a result chefs and their recipes were highly sought after. However, it was during the nineteenth century that cooking and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and publishing recipes common in their social group.

By the arrival of the twentieth century, cookery books are greatly in demand due to increased literacy, increased leisure time and being a little richer.
