Ingredients
1/3 cup cream-style corn or grated
1 fresh corn
1 egg, separated
1 tbsp flour
1 tbsp cornmeal
1 salt and pepper
1 tbsp milk
1 tsp vegetable oil or enough to
1 grease the skillet
Directions
1. Place the corn in a small bowl and add the egg yolk, flour, meal,
salt, and pepper. Stir well and mix in the milk.
2. Beat the egg white stiff and fold it in.
3. Oil a small skillet or griddle and spoon in the batter in desired
quantities.
4. Brown on both sides over medium low heat.
It makes about seven small, tablespoon sized cakes.

The History of Recipes
It is actually possible to trace the history of recipes back into history, certainly as far as ancient Egypt, and maybe further still. Having said that, mostly, these ancient recipes were just simple hieroglyphic instructions for preparing food.
The truth of the matter is, the oldest recipe discovered, according to historians are a few tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel exhilarated and blissful. As we move on, there are a couple of cookery books which date from the 14th Century : one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these two books are nothing to do with the curry that appears on menues today, but rather descriptions of the types of food enjoyed by the rich and powerful of the period. During the next few centuries, the wealthy families of Wesstern Europe competed to lay on the most exotic meals, and consequentially the best cooks and their collection of recipes were much in demand. Notwithstanding that, it was during the 1800s that formal cookery and recipe publications really came of age. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, trying out, and writing down recipes that were common in the better off homes of the day. By the advent of the 20th century, recipe publications are highly popular mostly due to better eduction, people having more spare time and having more money. The revolution that is television brought us TV cooks and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on sites such as this. |
