Ingredients
1/3 cup cream-style corn or grated
1 fresh corn
1 egg, separated
1 tbsp flour
1 tbsp cornmeal
1 salt and pepper
1 tbsp milk
1 tsp vegetable oil or enough to
1 grease the skillet
Directions
1. Place the corn in a small bowl and add the egg yolk, flour, meal,
salt, and pepper. Stir well and mix in the milk.
2. Beat the egg white stiff and fold it in.
3. Oil a small skillet or griddle and spoon in the batter in desired
quantities.
4. Brown on both sides over medium low heat.
It makes about seven small, tablespoon sized cakes.

The History of Recipes
Recipes as a concept can be traced way back into antiquity, in truth as far back as the Egypt of the Pharoahs, and possibly even further than that. Having said that, these, ancient records were just very simple hieroglyphic or cunieform recipes for preparing meals.
In fact, the oldest recipe in existence, according to experts is a collection of tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times around 25BC a roman called Apicius assembled a collection of documents detailing recipes enjoyed by the Romans. In his scrolls, he tells us how the roman meals were divided into starters, entrees and dessert, a style of dining still practiced today. He also describes how the early Romans used a wide range of spices, including a few that are still present in modern kitchens for example basil, fennel and parsley. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and herbs from Arab cooking, including parsley, basil and rosemary. These new culinary innovations led to a surge in recipe manuscripts, many of which are kept safe in private libraries. By the advent of the twentieth century, cooking books are highly popular mostly as a result of more people being able to read, more leisure time and disposable income. The introduction of the TV brings us TV cooks and the demand for the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes just like those on this web site. |
