The History of Recipes
It is quite possible to trace the history of written cooking instructions back into distant history, certainly as far into history as the ancient Egyptians, and maybe even further. Having said that, in the main part, these ancient recipes were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
In fact, the oldest recipe discovered so far, according to Professor Solomon Katz, are a few stone tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Later on, in The time of the roman empire 25BC a roman called Apicius compiled a few documents describing recipes cooked by the Romans. In his works, he recounts how the meals were separated into hors d`oeuvre, main meal and dessert, a style of dining still practiced today. He also tells us how the ancient chefs were skilled in the use of a wide range of spices, including a few that will be familiar to modern cooks like bay, mint and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us many spices and herbs from middle-east cuisine, such as basil and coriander. These new foods and tastes caused an explosion in manuscripts on food, many of which are now in academic collections. By the time we get to the 1900s, cookery publications are in high demand, mostly due to higher levels of literacy, people having more spare time and being a little richer. The arrival of television brings us cooking programs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes just like those on this web site. |
