Corn-Bean-Pork Bake Recipe


Ingredients

1 1/2 lb pork shoulder butt,smoked
1/4 cup brown sugar,light,packed
2 tsp mustard,yellow,prepared
1 cup corn,whole kernel,cooked
1/2 green pepper,cut/1 strips
1 tsp cloves,whole
1 tbsp orange juice
2 can pork and beans(16oz)
1/2 cup onion,minced
1 garlic clove,minced


Directions

1. Score pork butt with a sharp knife; stud with cloves.
2. Place meat in an 8-inch square shallow baking dish; bake in
preheated 325'F. oven 45 minutes.
3. Combine brown sugar, orange juice and 1 teaspoon mustard; spread
mixture over ham.
4. Combine beans, corn, onion, green pepper, garlic and remaining
mustard; pour around ham.
5. Bake 45 minutes longer.

The History of Recipes

Written cooking instructions as an idea can be found way back into history, certainly as far back into recorded history as early Egypt, and maybe further still. However, sadly, these ancient cook books were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.

In an interesting twist, the oldest recipe discovered, according to experts in ancient history is a series of ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`.

As we move into The time of the roman empire around 25BC a roman called Apicius compiled a collection of documents detailing recipes prepared by his fellow Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvres, entrees and desserts, a very modern way of dining. He also describes how the cooks of his times used many spices and herbs, including a few that are still present in modern kitchens such as basil, rue and asafoetida.

Moving our culinary historical trip onwards, there were a couple of recipe books which appeared in the 14th Century - a book called `Forme of Cury`, and another titled `Curye on Inglish`. Surprisingly, these books are nothing to do with the indian curry that we all know today, but instead recipes for the types of meals prepared by the chefs of the wealthy.

In the 15th century, knights returning from the crusades brought back a variety of foods and herbs from the holy land, including coriander, parsley, and basil. These new herbs and spices caused a surge in books on cooking, most of which are kept safe in private collections.

Over the next few hundred years, the upper-class families of the West competed to serve the most extravagent meals, and consequentially the best cooks and their recipes increased in prestige. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, testing, and recording recipes for their fellow cooks to enjoy.

When we get to the 1900s, cookery publications were highly popular mostly as a result of better eduction, people having more leisure time and a general increase in wealth.

The arrival of TV brings us TV cooks and the demand for the accompanying recipe books.

And that pretty much brings us to the present day and the internet revolution, allowing everyone to access thousands of recipes like the ones you can find on this site.
