The History of Recipes
It is quite possible to track the history of written cooking instructions back into antiquity, in fact as far back into recorded history as pharonic Egypt, and quite possibly further than that. Having said that, generally, these old records were just primitive hieroglyphic recipes for meal preparation.
Interestingly, the most ancient recipe found, according to food historians are a few clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of documents showing how to cook the recipes prepared by his fellow Romans. In his works, he tells us how the roman meals were separated into appetizers, main course and desserts, something we still use today. He also informs us how the ancient cooks used many aromatic flavors, including a few that will be familiar to modern chefs like bay, mint and asafoetida. Later, in the 15th century, the Crusaders brought back many new foods and spices from the Middle-East, including spices like coriander, parsley, basil and rosemary. These new foods and spices led to an increase in cookery books, many of which are kept safe in academic collections. By the time we get to the twentieth century, recipe publications were starting to become popular as a result of increased literacy, people having increased free time and having more money to spend. Like it or not, the introduction of TV brought us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes like the ones you can find on sites such as this. |
