Ingredients
2 lb pears
4 oz (1/2 cup) preserved ginger
2 lb (5 1/3 cups) sugar
1 1/4 cup water
1 oz (1) fresh ginger
1 juice of 2 lemons
Directions
Makes 2 lbs Peel, core and dice the pears. Cut the preserved ginger
nto small chunks. Put all the ingredients into a preserving kettle
and stir over a gentle hea t until the sugar has dissolved. Bring to
a boil and boil rapidly for abou t 10 minutes, stirring occasionally,
or until setting point is reached. Rem ove the piece of fresh ginger,
lift out the fruit with a slotted spoon and place in hot clean jars.
Rapidly boil the syrup to reduce for a few minute s, then pour over
the fruit to cover. Cover and process, then complete sea ls and cool.

The History of Recipes
Academics have tracked the existance of recipes back into antiquity, at least as far back as pharonic Egypt, and possibly even further. Interesting though that maybe, sadly, these old recipes were just primitive pictorial, hieroglyphic or cunieform instructions for meal preparation.
As our culinary historical trip moves on a few more years there are two recipe books which were published in the 1300s : a cookery book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, they are not about the indian food that we all know today, but rather descriptions of the types of food enjoyed by the rich and wealthy people of those days. In the fifteenth century, the Crusaders brought back a variety of foods and spices from the holy lands, such as parsley, basil and rosemary. These new spices and herbs was responsible for an increase in recipe publications, most of which are now in academic collections. Like it or not, the introduction of television brought us TV cooks and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through massive numbers of recipes like those on this web site. |
